Why does my eye color change ?

My eyes are brown and grey. basically two concentric circles with the inner one being brown and the outer one grey. they dont merge into one another. some days the brown color completely dominates the eyes leaving only a thin outer line of grey other times the grey color is in majority, why and how can this be ??
